Beverage Menu

Classic Cocktails


  • 3 oz dry gin
  • 1/2 oz dry vermouth

Shake with ice, strain into martini glass. Garnish with olive.

  • 3 oz Canadian whiskey
  • 1 oz sweet vermouth
  • 1 drop Angostura bitters

shake with ice, strain into martini glass, garnish with Collins cocktail cherries.

Tiki Drinks


  • 1 ounce lemon juice
  • 4 ounces dark rum
  • 4 ounces passion fruit juice
  • Crushed ice
  • Orange slice
  • 1 Maraschino Cherry

In a cocktail shaker, add lemon juice, rum, passion fruit syrup, and crushed ice; shake vigorously for 1 to 2 minutes and then strain into a tall glass or hurricane glass. Garnish with an orange slice and a maraschino cherry.

Mai Tai

  • 2 oz white rum
  • 1 oz gold rum
  • 1 oz lime juice
  • 1 oz Cointreau
  • 1 oz Maraschino syrup

Shake and pour over crushed ice


  • 1 oz Apricot Brandy (key ingredient here)
  • 1 oz light rum
  • 1 oz dark rum
  • 1 oz lemon juice
  • 1 oz lime juice
  • couple dashes grenadine
  • orange juice
  • 1 oz 151 rum

In a cocktail shaker, mix light & dark rums and brandy. Add lemon and lime juice and dashes grenadine. Shake well and strain into a higball glass filled with ice. Fill glass with orange juice leaving room to float 1 oz of 151. Garnish with cherry, orange slice, pineapple wedge.

Modern Cocktails


  • 2 oz Roaring Dan Maple Flavored Rum
  • 1/3 oz Angostura bitters
  • Sprecher Cream Soda to taste

In a mixer (12 oz) glass, shake 1/3 oz (about 4-5 heavy shakes) of bitters over ice. Add rum and stir. Fill with Cream Soda. Garnish with cherry.
